Honey from Cinque Terre, Liguria

Born from the passion of its founders, Lucchi and Guastalli is the first company to boast the Riviera Ligure. 30 hectares of olive groves and vineyards, on terraced hillsides, divided into several lots in the municipalities of Santo Stefano di Magra, Vezzano Ligure and Riomaggiore. In Riomaggiore, in the area of the Cinque Terre National Park, Lucchi e Guastalli produces Acacia and Chestnut Honeys, and the precious Heather Honey, characteristic essence of the area. Cinque Terre honey is the product of an uncontaminated environment free from chemical conditioning, an oasis where the beauty of Nature is integrated with the work of man, creator of the characteristic dry stone walls. Here our bees operate safely favored by the mild and sunny climate, only taking shelter in the hive when sea winds sometimes make flight difficult.

Difference between honey and honeydew
Honey is a food made by bees that, after extracting nectar from flowers, they add their enzymes and let it mature inside the hive. Different flowers present in nature produce different types of nectar, so there are various types of honey. One of the rarest and healthiest is honeydew honey which instead of being produced with flowers nectar, is obtained from a substance often found on leaves or tree bark, honeydew indeed.
Thus, the main difference between conventional nectar honey and honeydew honey lies in raw materials: honey is taken from flowers, while honewdew comes from substances produced by some insects that bees find on leaves or bark of some trees (e.g. spruce, linden, pine and oak).
Compared to the more canonical nectar honey, honeydew honey is less sweet, contains less sugar and is the ideal alternative for those who must follow a low-calorie diet. The flavour, reminiscent of caramel, has a resin aftertaste and leaves a slightly bitter taste; its color is darker, almost tending to black. Finally, the consistency is as compact as that of nectar honey, but does not tend to crystallize.
