Pesto Genovese DOP
It is one of the best known creamy sauce in the world, a symbol of traditional Ligurian gastronomy. Cold sauce according to the classic recipe handed down for generations and protected by the Consortium (beware of the products named“Pesto alla Genovese” or “Pesto Ligure”, etc.), of which the basic ingredient is only the DOP Genoese Basil, recognizable by the Consortium brand on the label. It is made by shredding and cold mixing the ingredients without any heat treatment.
After opening, store in the refrigerator covered with oil.
INGREDIENTS: Genoese Basil DOP 39%, Extra Virgin Olive oil, Parmigiano Reggiano DOP, walnuts, pecorino DOP, pine nuts, garlic, salt.

Walnut sauce
Walnuts arrived in Genoa a thousand years ago, from Persia via the Balkans. Since then, the people of Liguria have been unable to do without this delicately flavoured cream, used especially with fresh filled pasta, such as the typical “pansoti” from Tigullio.
INGREDIENTS: Walnuts 30%, cashews, extra virgin olive oil, Parmigiano Reggiano DOP (milk, salt, rennet), salt.

SPAGHETTATA LIGURE
A creamy sauce, characterized by the intense flavor of dried tomatoes, Ligurian hints of Taggiasca olives and the sea anchovy. It can be used as a condiment for first courses, side dishes and boiled vegetables, as well as an original sauce for tempting appetizers and canapés.
INGREDIENTS: 65% dried tomatoes (origin: Italy), extra virgin olive oil, pitted Taggiasca olives, anchovies, oregano, garlic, salt.
