San Pantaleo catches bluefin tuna caught with longline fishing, a selective method certified according to ICCAT quotas. The tuna is landed by trusted vessels, carefully inspected, and distributed across major Italian and international markets, from wholesalers to top-tier restaurants.

The Bluefin tuna (Thunnus thynnus) used by San Pantaleo comes exclusively from strictly regulated and authorised fishing activities, carried out in full compliance with European and international conservation rules.
Bluefin tuna is a protected species, and fishing is allowed only during a very limited period of the year, when the tuna are fully mature, highly abundant, and naturally concentrated in specific areas of the Mediterranean. This ensures both the reproductive cycle and the long-term preservation of the species.
All fishing operations follow the official ICCAT (International Commission for the Conservation of Atlantic Tunas) quotas, which assign each vessel a precise, non-exceedable catch limit, measured in tonnes and monitored in real time.
Throughout the fishing season, every authorised boat is subject to:
- on-board inspections,
- satellite tracking,
- controls by the Italian Coast Guard and Navy,
- verification of logbooks and weights,
- quota cross-checks.
These measures ensure maximum transparency and full compliance with EU Regulation 2016/1627 and related conservation protocols.
San Pantaleo sources its tuna only from licensed vessels operating under these rigorous controls. This guarantees a product that is not only premium in quality, but also responsibly harvested, environmentally respectful, and aligned with sustainable fishing practices designed to protect the future of Bluefin tuna stocks.
